La Table de Guillôme, a restaurant in the historic centre of Fréjus, conjures up a rich repertoire of southern flavours and aromas. With a distinctly Provençal flair, the cuisine pays homage to local produce, all sourced from small-scale producers or indeed, from our own kitchen garden.

The Var is an open-air hothouse of vibrantly coloured vegetables from plump tomatoes through to courgettes, peppers and aubergines. And from the sea, our signature dishes feature the finest fish and seafood of the Mediterranean, while from the land, Sisteron lamb, beef and pork confit take centre stage: a veritable Provençal symphony that is sure to strike a chord with your taste buds


While the season sets the tone and the southern repertoire the theme, creativity allows for all manner of interpretations depending on the inspirations of the day.

With its aioli, seafood bourride stew, courgette flowers and stuffed vegetables, Provence is never short of ideas when it comes to tantalising the palates of gourmets.

In the glass, the region offers a colourful array of bottles from local winemakers, from dazzling labels to more small-scale productions. From great finds to budget-friendly discoveries, Provence is as mineral in flavour as it is full-bodied, and in wonderful shades of pink of course.

And when it is time to venture further afield, the wine list delves into the treasures of the Rhône Valley and Bordeaux, wherever winegrowers work with passion and dedication.

Guillaume Anor and Jérôme Radigue, two chefs & four hands

"La Table de Guillôme", a restaurant in the centre of Fréjus, is the stage for the creative interpretations of Guillaume Anor and Jérôme Radigue, two chefs fuelled by their passion.

While Guillaume grew up in Les Adrets-de-l'Estérel, where his parents cultivated olive groves and vineyards, Jérôme spent his childhood in Normandy and it was there that he developed his passion for cooking.

In the south, olive oil; in the north, butter and cream. Each followed their own trajectory, made up of the finest restaurants and inspiring experiences, until their paths crossed in the wings of a 5-star hotel in Brittany. This meeting marked the start of a shared adventure.


They then headed south to Théoule-sur-Mer to work in a 5-star beach front boutique hotel, together creating its culinary signature. The experience cemented their friendship and their complementarity, and inspired them to embark on a new project, this time all of their own.

In partnership with Jacques Janer, the two chefs now have a tailor-made venue for their heartfelt cuisine of flavour and colour. With two chef's hats and four hands, together they are shaping the gastronomic experience of La Table de Guillôme at the Hotel L'Aréna in Fréjus.

On Sundays, when time is not an issue, the L'Aréna brunch is a truly lavish affair. With a wide selection of pastries, eggs cooked in all manner of ways, local charcuterie, cheeses and shellfish from the Mediterranean, the hardest part is choosing. And even more so with the cold starters, hot main courses, and desserts, all dreamt up by this talented duo of chefs. 

Inspired by childhood memories of Niçois specialities, Granny Graille's Armoricaine-style squid, stuffed vegetables, roasted figs and chocolate shortbread, this is a meal that offers double the chances to savour all manner of specialities. Brunch at the 3-star Hotel L'Aréna in Fréjus is a Sunday rendezvous where indulgence features heavily on the menu.
